This is a very delicious and easy recipe that I got from a sister in my ward (thanks Linda) One of the best parts of it is the cruchy, yummy top layer that the coconut makes.

2 C. flour
1 C. sugar
3 tsp. baking powder
mix above dry ingredients together
1/2 C. shortening - cut into dry mixture
2 eggs, beaten
1 C. milk
Combine and stir into dry ingredients.
Fold 1 1/2 C. blueberries (fresh or frozen) in to the batter.
Sprinkle top with 1 1/3 C. flaked coconut.
Bake in 2 greased 9 inch layer cake pans for 25 minutes or one greased 9 x 13 pan for about 30 - 35 minutes.
